The sparkling sake “Hajimari” was created to commemorate 1,300 years since the compilation of the Kojiki and Nihon Shoki, Japan’s ancient chronicles. Inspired by the legend of Konohanasakuya-hime (the cherry blossom goddess), who is associated with Miyazaki—the mythological birthplace of sake according to the Hyuga myths—this sake is a tribute to Japan’s storied sake heritage. Crafted using traditional bottle fermentation, “Hajimari” is a delicately sparkling sake with a refreshingly crisp and clean taste that pairs beautifully with any cuisine.
