Crafted with time-honored tradition and skill, this Junmai Daiginjo uses Yamada Nishiki sake rice from Takachiho, carefully polished to 50% or less. The entire 700 kg batch is hand-washed and brewed solely with rice and rice koji, resulting in a refreshingly smooth sake with pure, delicate flavors that showcase the essence of its premium ingredients.
