Hebesu, a specialty citrus fruit from Hyuga, Miyazaki Prefecture, is larger than sudachi, with thinner skin than yuzu, fewer seeds, and an abundance of juice. It is exceptionally rich in vitamin C and contains a high concentration of citric acid, known for its fatigue-fighting properties. “Hebesu Sake” is crafted by blending undiluted Sentoku sake with fresh hebesu juice, resulting in a liqueur with bright, fruity acidity and a crisp, refreshing flavor profile.
