“Inatsu” is a project by SAKEBOYS and Ninomae Ina’nis, through which she explores the world of sake and shares with her fans the excitement and new discoveries she encounters along the way.

For Season 2, we turned our focus to yeast.

When Ina became interested in the idea that “yeast can bring out fruit-like aromas in sake,” we brewed multiple prototypes using a yeast strain developed in Saga Prefecture.

After tasting them, the one she chose was StyY, known for its pear-like aroma.

What stood out was how clearly the sake expressed the aroma of pear, with a distinct character that anyone could recognize.
At the same time, its light sweetness felt naturally in harmony with the atmosphere of the rainy season and the “clear” impression conveyed by the artwork.
That sensibility became the guiding direction for Season 2.

This sake is brewed by Seto Shuzo in Ureshino City, Saga Prefecture.
With a history spanning more than 230 years, the brewery has remained committed to its belief in making “honest sake.” Using only carefully selected rice, koji, and water, they brew each batch with great care through the traditional three-step fermentation method.

Pour it into a glass, and a sweet, rich aroma reminiscent of pear gently rises.
The palate is light, while a refined, translucent umami quietly spreads across the mouth.
Served chilled in a wine glass, this Junmai Daiginjo offers such clarity that even the humidity of the season feels somehow purified.

The Fascinating History of Kyushu Sake:

There is actually a rather fascinating history behind sake from Kyushu.
Back in the 16th century, during the Age of Exploration, Portuguese ships arrived in Nagasaki and Hirado, bringing sugar to Japan for the very first time. From there, this new sweetness slowly traveled outward—from Nagasaki to Saga, Kokura, and eventually all the way to Osaka and Edo.

As sugar culture took root, Kyushu’s soy sauce gradually became sweeter, and in harmony with that, its sake also evolved into something rounder, gentler, and touched with a mellow sweetness. This style of sake—softly sweet, yet full-bodied and satisfying—pairs beautifully not only with richly seasoned Japanese dishes, but with cuisines from around the world as well.

And what makes Kyushu sake even more intriguing is how each prefecture has its own personality. Fukuoka is known for its clean and dry elegance, Saga for its rich and luscious sweetness, and Oita for a lighter, more delicate sweetness.

Kyushu sake really is a world of depth waiting to be discovered.

Inatsu was brewed by Seto Shuzo, a distinguished brewery with over 200 years of history in Ureshino, Saga Prefecture. Seto Shuzo is deeply committed to crafting sake without compromise, using only the finest rice, kōji, and water, and adhering to time-honored brewing methods.

Every sake they produce—from Honjozo to Daiginjo—is brewed using the traditional sandanjikomi (three-step fermentation) technique, resulting in a flavor profile that highlights the gentle sweetness inherent in the rice.

While many modern breweries now focus on aroma-forward styles like Daiginjo and Junmai Daiginjo, Seto Shuzo remains true to the essence of sake as a brewed, not distilled, beverage—placing greater emphasis on depth of flavor and natural sweetness as the foundation of their craft.
