SENTOKU SHUZO
Founded in 1903. Sentoku is the only sake brewery in Miyazaki with a history of over 100 years. Sentoku uses Yamada Nishiki and Hanakagura rice, both of which are shuzo kotekimai grown in Miyazaki Prefecture, as well as other domestic Uruchi rice. The water used for brewing is the infiltrated water of the Gokase River, which originates in Takachiho, the village of the gods. Sentoku has been brewing sake for over 100 years, and our brewers and toji (chief brewer) are committed to making sake with honesty and sincerity in Miyazaki.
Koshimizu Cultivation
"Koshimizu Cultivation" is an environmentally friendly farming method that efficiently uses organic micro-organisms instead of chemical fertilisers by mixing Koshimizu Liquid, developed in Koshimizu-cho, Shari-gun, Hokkaido and manufactured from deep sea water, with cattle and pig manure compost. The rice produced by Koshimizu cultivation was selected as imperial rice in 2015.
Bacteria and minerals
The function of bacteria and minerals is effectively utilised to draw out the plant's own immunity (resistance to disease and insects), resulting in rice that is rich in minerals. Bacteria help to break down organic matter and fertilisers so that they can be easily absorbed by plants, while minerals are effective micro-organisms that promote the activation of bacteria and enhance the activation of actinomycetes.
Certified vegan
Sentoku Brewery is certified vegan. No meat, seafood, eggs, dairy products, honey or other products of animal origin are used as ingredients.
The certification is only for Sarasara Nigori, but Sentoku Sake Brewery uses the same raw materials for all its products.
